Chef Daniel Chavez have previously headed the kitchens of 3 Michelin Star Spanish Chef Santi Santamaria at “Ossiano” in the Atlantis Hotel and “Santi” at the Marina Bay Sands Hotel.
 
In 2012 his opened his first personal project “OLA” Cocina del Mar focusing on a lighter approach to Spanish cooking which followed in 2017 with Peruvian TONO Cevicheria and “TONITO” Latin American Kitchen at the Jewel Changi Airport.
 
In 2018 Daniel creates “LATINADA” Latin America’s First Food Festival in Singapore.
 
Having exited the OLA Kitchen Group after 9 years, Daniel founded its most important project to date “CANCHITA” Peruvian Cuisine in May of 2021 as its Chef-Owner.
 
As a proud ambassador of Latin American gastronomy, Daniel devotes his time to working with his wife chef Tamara Chávez to showcase the culinary diversity and traditions of Peru and the continent in Asia.
 
Daniel was awarded the Global Chef Award in 2017 by At-Sunrice Global Chef Academy for his work in inspiring young chefs, as well as “Entrepreneur of the Year” in 2018 by Peruvian University San Ignacio de Loyola, a distinction conferred to him by the former vice president of Peru, Mr Raul Diez Canseco.
