As the founder of the OLA Kitchen Group, Daniel’s approach to food is joyful, simple and tasty, with a focus on fresh, sustainably sourced ingredients.
Daniel previously headed the ktchens of “Ossiano” at the Atlantis Hotel and “Santi” at the Marina Bay Sands for 3 Michelin Star Chef Santamaria. He opened in 2012 his first personal project “OLA” Cocina del Mar, a Spanish seafood restaurant, in the heart of Singapore’s CBD.
In May 2017, Daniel founded TONO Cevicheria, the first authentic Peruvian cevicheria in Singapore. Paying homage to his Peruvian roots, TONO, the Peruvian slang word for “party”, is a celebration of one of the world’s most eclectic cultures and seeks to bring the liveliness, spice and flavour of Peru to Singapore.
In 2018 Daniel creates “LATINADA” Latin America’s First Food Festival in Singapore.In its 2019 edition the event gathers more than 3300 guests, 11 Latino Chefs, 11 participating restaurants and 12 events.
In 2019 he opened “TONITO” Latin American Kitchen at the Jewel Changi Airport. The project is unique and new to the Singapore dining scene focusing on the cuisine of the whole region of Latin America.
