Mario Malvaez is a chef from Mexico City having had 10 years of opening food and beverage outlets in South East Asia. He has opened and headed projects such as Piedra Negra and Lucha Loco and Tono Cevicheria all located in Singapore.

Mario then made his next move to Bangkok where he worked for Chef Gaggan Anand, voted best chef in Asia four years in a row by Asia´s 50 Best. Gaggan approached Mario after his travels to South America to revamp his all charcoal powered restaurant ¨Meatlicious¨to include more Latin American influence. While working in Bangkok Mario was introduced to Porag, the man behind Holey Bakery in Bangkok and Bangladesh. Through this connection Mario travelled to Bangladesh to cook in Oro, a contemporary Spanish restaurant.

Currently Mario is working at the renowned Maximo Bistrot in Mexico City with chef Eduardo Garcia. The perfect place to be introduced to the best of Mexican product with a man who knows how to bring out the best of every ingredient. Between daily duties at Maximo Bistrot, Mario is also hosting his own events at Lalo. He has started a dinner series named “Mee Rojak”. In Singaporean slang “Mee” means noodle while “Rojak” means eclectic mix. Mario is cooking dishes that are found through South East Asia with a focus on noodles.
